Holiday Ham Leftovers? Make Ham Salad!

I love ham! We always buy the semi-boneless smoked variety from our local grocer. The trouble is there are only two of us and there is a lot of leftovers. I make a mean ham soup but sometimes I want to change things up a bit. This year I made ham salad! It is so yummy!

Ingredients for ham salad:

  • 3 cups of chopped smoked/cooked ham
  • 3 peeled boiled eggs – chopped
  • 2 stalks celery – diced
  • 3 tablespoons sweet relish (or more to taste)
  • 2 teaspoons minced onion (or more to taste)
  • 1 teaspoon dry mustard
  • 1/4 cup mayonnaise (you made need more depending on how moist you want it)
  • 1 teaspoon fresh thyme
  • 1 tablespoon chopped fresh parsley
  • salt and pepper to taste

I mix everything but the ham and then add the ham in last. Refrigerate immediately.

Serving suggestions:

  • As a side to a relish tray
  • Snack with crackers and cheese
  • As a sandwich – great on a brioche bun
  • Stuff ham salad in tomato for a yummy lunch
  • Topping for a simple salad
