I love ham! We always buy the semi-boneless smoked variety from our local grocer. The trouble is there are only two of us and there is a lot of leftovers. I make a mean ham soup but sometimes I want to change things up a bit. This year I made ham salad! It is so yummy!
Ingredients for ham salad:
- 3 cups of chopped smoked/cooked ham
- 3 peeled boiled eggs – chopped
- 2 stalks celery – diced
- 3 tablespoons sweet relish (or more to taste)
- 2 teaspoons minced onion (or more to taste)
- 1 teaspoon dry mustard
- 1/4 cup mayonnaise (you made need more depending on how moist you want it)
- 1 teaspoon fresh thyme
- 1 tablespoon chopped fresh parsley
- salt and pepper to taste
I mix everything but the ham and then add the ham in last. Refrigerate immediately.
Serving suggestions:
- As a side to a relish tray
- Snack with crackers and cheese
- As a sandwich – great on a brioche bun
- Stuff ham salad in tomato for a yummy lunch
- Topping for a simple salad
I hope you enjoy my recipe. I certainly enjoyed making it for you!
